Roasted Tomatillo Salsa Pizza with Chorizo & Goat Cheese


I'm super excited to share this Roasted Tomatillo Salsa Pizza with Chorizo and Goat Cheese with all of you. If you like slightly spicy food you will love this delicious pizza.
Makes one large pizza. Serving size 2-4 people.
Easy Pizza Crust Ingredients:
2 cups all-purpose flour
1/4 teaspoon instant or rapid-rise yeast
1 teaspoon salt
1/2 cup room temperature water
1/3 cup beer
Directions:
In a medium bowl, mix together the flour, yeast and salt. Add the water and beer. Stir to combine everything. Cover with plastic wrap and leave at room temperature overnight.

(I roasted 5 serranos. You will only need 1-2)

Roasted Tomatillo Salsa Ingredients:
5-6 tomatillos, husked and rinsed
1 or 2 serranos or 1 jalapeno (I used serranos)
6 sprigs of fresh cilantro 
Salt
1/4 small white onion, finely chopped (add once other ingredients are purred)
Directions:
Roast the tomatillos and serranos on a rimmed baking sheet 4 inches below a very hot broiler, until blotchy and soft (about 5 minutes.) Flip them over and roast the other side. Cool, then transfer everything to a blender. Add the cilantro and blend to a coarse puree. Transfer to a serving dish. Stir finely chopped white onion into the salsa and season with salt.

Now for the fun part. MAKING THE PIZZA!!!!!
Pre-Baked Pizza
Additional Ingredients:
A couple of very thin slices of red onion
4 ounces Mexican Chorizo (remove casing and cooked thoroughly)
6 sprigs of fresh cilantro 
A few tablespoons olive oil
4 ounces goat cheese (coarsely crumbled)
Directions:
Heat the oven to 500 degrees for about 20-30 minutes. Generously oil a rimmed baking sheet.  Gently spread dough onto baking sheet.

Spread on the sauce, leaving a 1-inch border around the outside. Scatter on the browned Mexican chorizo, sliced red onion and crumbled goat cheese.  Bake in the middle of the oven until puffy and brown, about 25 minutes.

Sprinkle with cilantro leaves. Parmesan optional. Cut pizza into squares and serve.
