Oh my Caramel Goodness!

While reading Self Magazine I came across this recipe for Samoas a.k.a Caramel de-Lites by Girl Scout Cookies. Side note: These are my FAVORITE GIRL SCOUT COOKIES EVER! The best part is this recipe is lower in fat and calories. Sign me up........


Oh my CARAMEL GOODNESS:
  • 1/2 cup of sweetened coconut
  • 12 chewy caramels
  • 3 tbsp. dark or semisweet chocolate chips
  • 24 reduced-fat Nilla Wafers 
  • 1/4 cup slim milk
  • Parchment paper
  • reusable bag
Heat oven to 300 degrees. On a baking sheet, toast sweetened coconut. Turning every 5 minutes, until golden brown. Let cool. Using parchment paper cover separate baking sheet; set wafers on top. In a microwavable bowel, microwave caramels and milk on high, stirring until smooth. Should take about 4 minutes. Fold sweetened coconut into caramel mixture. Spread about 1 tbsp. caramel mixture onto each wafer. Let cookies cool completely (I put cookies in refrigerator for this step) Next microwave chocolate, stir often, until melted. Should take about 3 minutes. Transfer chocolate into reusable bag. Snip tiny portion of bag corner. Drizzle cookies with chocolate, let cool.
Makes 24 cookies: each cookie has 52 calories, 2g fat, 1g saturated fat, 8g carbs, 0g fiber, 1g protein.

Oh my Carmel Goodness cookies received approval from my husband and that means they are G-O-O-D good!!!!!!

  2. Can't wait to try these. Especially since I just bought some girl scout cookies and they are $3.50 or $4 a box now!! Kinda crazy for like 10 cookies!
